Mix gluten free flour, protein powder, baking powder, egg, and 6-8 tablespoons of almond milk, or just enough to make the consistency of pancake mix.
Heat a nonstick skillet to medium heat. Spray with cooking spray. Scoop with a two tablespoon cookie scoop onto the skillet to make 6 pancakes. Cook slowly so the inside cooks all the way through. Flip and cook both sides.
Remove from pan and top with low calorie glaze, sugar free syrup, or whipping cream.
