To make the sugar free candied pecans, whip one egg white until peaks form.
Take 2 tablespoons of the whipped egg whites, and put in a small bowl. Add 1/2 ounce of pecans (I do this with a full ounce, but you only need 1/2 for your salad).
Stir to coat the nuts. Fold in the brown sugar swerve to coat the nuts.
Bake at 200 degrees, for 1 hour, stirring every 20 minutes.
