Ingredients
Toast the Candied Nuts
4ounceschopped pecans or walnuts
1/4cupbutter
1/4cupbrown sugar
Salad
8cupsspinach
4cupsmixed greens
1/2mediumred onionchopped
1mediumpomegranateor 1 cup craisins
Dressing
1/4cupsugar
1/8cupapple cider vinegar
1teaspoondry mustard
1/8teaspoonsalt
1/4cupoil
1/2tablespoonpoppyseeds
Instructions
Toast the Candied Nuts
Melt butter and mix in brown sugar and the nuts. Spread on a cookie sheet, and toast in the oven for 8-10 minutes, stirring occasionally. Watch carefully so they don't burn. Remove from oven and let cool.
Salad
Mix together the spinach, greens, chopped onion, pomegranate seeds or dried cranberries and nuts.
Whisk all dressing ingredients together in a bowl and pour over the salad just before serving. Toss to coat.
