Ingredients
1tablespoonolive oil
1/2mediumonionchopped
2clovesgarlicminced
2lbschicken breasts, boneless, skinless
7cupschicken broth
2cansdiced tomatoes30 oz total
2/3cupwhite rice
12ouncecornfrozen is OK
2mediumcarrotschopped
1/2cupblack beans
2tablespoonstaco seasoning
Instructions
Pour olive oil in a large pot and sauté onion and garlic for 3-4 minutes.
Add ALL remaining ingredients to pot. Bring to a boil and then simmer for 30-40 minutes.
Serve topped with cheese, cilantro, sour cream. avocado, limes, or tortilla chips.
