I’ve been making this chicken taco soup for our Sunday night dinners, as well as our camping trip. It’s a crowd favorite, AND it’s so easy to put together.
However, the problem with soups and dieting is that it’s hard to estimate how much you are eating and what the calories and macro’s are for the soup.
But don’t worry, I’ve got you covered! I weighed this ENTIRE pot of soup, entered the recipe, and divided the calories and macros per cup. Here’s what I got:
- The entire pot of soup was 3879 grams and 17 cups.
- Each cup of soup therefor was 229 grams in weight.
- For each cup of soup, I got:
- 125 calories
- 15 g protein
- 7 g carbs
- 2 g fat
- 1 g fiber
- 2 g sugar
- 72 mg sodium
- and 81% of your daily value for Vitamin A!
So, basically, have your chicken taco soup, feed your family, and STILL be on track to reach your weight loss goals. Have I mentioned this is why I LOVE calorie counting! Literally, any of my favorite foods can fit into this lifestyle and I can still lose weight.
Ingredients in Chicken Taco Soup
I like to add a lot of ingredients to this taco soup. It really bulks up the volume while keeping calories low. For veggies, I like:
- Onions and Garlic: I first sauté these in a little bit of olive oil to soften them and bring out the flavor.
- tomatoes: The tomatoes are to give flavor to the soup, and doubles as a broth for the dish.
- Corn: Corn is so good in chicken taco soup! Don’t skip the corn, even if you are trying to eat low carb. It makes it delicious!
- and carrots: If there was one veggie I’d cut it would be the carrots. But, if you are really going for high volume, low calorie soup, keep the carrots in.
These veggies all give the taco soup a southwest vibe.
Then for the main part of the soup, I like to include:
- Chicken breasts
- Rice
- and Black beans!
Of course, I also add some chicken broth because it’s a soup!
Chicken Taco Soup Topping Ideas
While not necessary’s, and wasn’t included in the calories and macros, some things I like to top chicken taco soup with is:
- Shredded cheese
- Light sour cream
- Cilantro
- Sliced Avocado
- Tortilla strips or chips
- Sliced limes or lime juice
Easy Chicken Taco Soup
Ingredients
- 1 tablespoon olive oil
- 1/2 medium onion chopped
- 2 cloves garlic minced
- 2 lbs chicken breasts, boneless, skinless
- 7 cups chicken broth
- 2 cans diced tomatoes 30 oz total
- 2/3 cup white rice
- 12 ounce corn frozen is OK
- 2 medium carrots chopped
- 1/2 cup black beans
- 2 tablespoons taco seasoning
Instructions
- Pour olive oil in a large pot and sauté onion and garlic for 3-4 minutes.
- Add ALL remaining ingredients to pot. Bring to a boil and then simmer for 30-40 minutes.
- Serve topped with cheese, cilantro, sour cream. avocado, limes, or tortilla chips.
