Ingredients
50gzucchini
50gpotato
1mediumEgg
3mediumegg whites
1slicethin sliced 45 calorie cheddar cheese
Instructions
Using the thin/flat slicer attachment on my spiralizer, I cut half a potato and half a zucchini into thin slices. You can also just slice thin with a knife.
Then, I cooked those in a skillet just till it was hot all the way through and a big soft.
Then, I whisked 1 egg and 3 egg whites, and poured it over the potato and zucchini.
When the eggs set and cooked through, I flipped the whole thing, and added the cheese to half the omelet. Then, folded the other half on top of it.
