Ingredients
8ouncechicken tenderloins
2wedgeslaughing cow cheese
1.5ounceswiss chesse
Instructions
Preheat oven to 400F. Pat chicken dry and pound slighly so each tenderloin is equal in size. Spread 1/2 laughing cow cheese on each tenderloin. Top with a strip of swiss cheese (or 1/3 ounce shredded cheese). Sprinkle with salt to taste.
Bake for 12-14 minutes or until chicken is no longer pink.

EXPERT TIP: I did brine my chicken for a few hours today. About 2 hours before I cooked it, I put it in a container, covered the chicken with water, and added 1/8 cup salt and 1/8 cup sugar. (post and video here!)
