Ingredients
1/4cupNonfat Plain Greek Yogurt
5Ritz Crackers
1/2ounceparmesan cheeseshredded
1/4teaspoonseason salt
1/4teaspoongarlic powder
salt to taste
4ounceschicken tenderloins
1/2tablespoonbuttermelted
Optional Chicken Brine
1/8cupsalt
1/8cupsugar
Enough water to cover chicken
Instructions
Put chicken in a container covered in water. Add salt and sugar to the water and chill in the fridge for 2-4 hours.
Add Yogurt to a shallow dish.
Add Ritz crackers to a second shallow dish and crush with the back of a fork. (if making a lot, put in a ziptop bag and crush with a rolling pin)
Add parmesan cheese, season salt, garlic powder, and salt to the bowl with the crushed crackers.
Remove chicken from water and blot dry with a paper towel. Covering the chicken with a small piece of plastic wrap, pound gently with a mallet to flatten and make chicken pieces the same width.
Dip chicken in yogurt bowl, coating both sides. Then dip chicken in cracker bowl and press crumbs onto both sides.
Spray a cookie sheet with cooking spray and arrange on a pan. Do not crowd.
Drizzle melted butter on chicken. Bake at 400 degrees for 20 minutes, or until center is no longer pink.
