Protein-Packed Yogurt Parmesan Chicken Recipe for One | Low-Calorie, High Taste!

Why You Should Make this Yogurt Parmesan Chicken?
This is one of those recipes that I made a lot while raising kids. They loved this dinner. It was definitely a go-to. Now that they are grown, I’ll still make it when we only have 5-6 people coming home for Sunday dinner. Otherwise, with 20 people over, It’s just too much work.
But you know what’s even less work, DINNER for 1! Do you want more lunches or dinners for one person? Are you an empty nester like me? When you’re counting calories and macros, making the smallest batch of this just makes sense, because you can use ALL the ingredients, and know that it’s all been calculated.
So, that’s what I’ve done here.
Protein-Packed Yogurt Chicken Recipe | Low-Calorie, High Taste!
Ingredients
- 1/4 cup Nonfat Plain Greek Yogurt
- 5 Ritz Crackers
- 1/2 ounce parmesan cheese shredded
- 1/4 teaspoon season salt
- 1/4 teaspoon garlic powder
- salt to taste
- 4 ounces chicken tenderloins
- 1/2 tablespoon butter melted
Optional Chicken Brine
- 1/8 cup salt
- 1/8 cup sugar
- Enough water to cover chicken
Instructions
- Put chicken in a container covered in water. Add salt and sugar to the water and chill in the fridge for 2-4 hours.
- Add Yogurt to a shallow dish.
- Add Ritz crackers to a second shallow dish and crush with the back of a fork. (if making a lot, put in a ziptop bag and crush with a rolling pin)
- Add parmesan cheese, season salt, garlic powder, and salt to the bowl with the crushed crackers.
- Remove chicken from water and blot dry with a paper towel. Covering the chicken with a small piece of plastic wrap, pound gently with a mallet to flatten and make chicken pieces the same width.
- Dip chicken in yogurt bowl, coating both sides. Then dip chicken in cracker bowl and press crumbs onto both sides.
- Spray a cookie sheet with cooking spray and arrange on a pan. Do not crowd.
- Drizzle melted butter on chicken. Bake at 400 degrees for 20 minutes, or until center is no longer pink.
