I’m continuing on with my series of high protein meals for 2! I was so good at making dinner for my family when I was raising kids, but when they moved out, I stopped! At first, I was just making meals for myself. And sometimes, I would just eat cereal or sandwiches for dinner. Don’t get me wrong, I LOVE that approach. haha. But, I also know that a good balanced meal is ideal, and making dinner for my husband is something I could still do and he’d REALLY appreciate it.

So, here we are with another of our favorite dinners. This Chicken taco bowl is perfect because we generally have ALL the ingredients on hand. Even the rotisserie chicken. Every time we go to Costco we buy one, and break it up for adding to meals all week.

These bowls have pre-cooked chicken, pre-cooked white rice (I now buy the single serve containers of white rice and they’re a game changer!!, black beans, corn, creamy avocado, juicy tomatoes (the last from our garden), and crunchy tortilla strips, finished with cotija, cilantro, and a squeeze of fresh lime.

I love meals like this because everyone builds their bowl exactly how they like it, and you still get a satisfying mix of protein, carbs, veggies, and healthy fats in one bowl.

Why You’ll Love These Chicken Taco Bowls

  • 35 grams of protein per bowl, from the rotisserie chicken and the black beans.
  • No cooking required: rotisserie chicken and precooked rice mean dinner in about 10 minutes.
  • Build your own: everyone adds exactly what they like.
  • Balanced and filling: protein, carbs, veggies, and healthy fats in every bite.
  • Made for two: no leftover taco fixings piling up in the fridge.
