My Story
I have always loved cooking, eating, and spending time in the kitchen. And, it showed. I struggled with my weight from a very young age, despite eating a relatively healthy diet, and exercising most of my life.
My weight loss transformation stories:
- Read part 1 of my weight loss story here . I was able to lose weight by eating three meals a day, eating mindfully and practicing portion control.

My #1 weight loss and maintenance tip is to stop eating between meals and count calories! That’s it. I’ve achieved all my goals by doing these two things!
Why Do You Sell Portion Plates?
Using a divided plate for proper portions of proteins, grains, fruit, and veggies, helped me and my kids to feel healthy and happy. {check out my divided plates here}

I developed my first portion control plate for kids back in 2007. To sell the plates, I started a website called Superhealthykids.com.
On this website, I shared food ideas, recipes, health strategies, and of course, sold those plates!
From 2007-2018 I worked at building a community at Super Healthy Kids and found millions of parents that connected with our message, and desired to feed their family better.
The portion control plates were an affordable solution that not only taught kids what they should be eating, but also reminded the parents to keep their meals in balance to reduce cravings and overeating.
January 2019 I sold my ownership in Super Healthy Kids because my kids grew up and I wasn’t feeding broccoli to toddlers anymore.
I rebranded the portion control plates and launched a new blog, Health Beet. Today, those portion control plates are a #1 seller on Amazon with more than 100,000 families lives changed. The majority of my time is optimizing my Amazon store to sell those plates.
With this blog, Health Beet, I document my weight loss ideas, meal plans, recipes, and portion control tips that have helped me lose weight and keep it off.
My Education & Career
Despite my personal weight struggle, I started my career in the health field in 1998 when I graduated from BYU in Community Health. Although I wasn’t at a weight that I was comfortable at, I began working at the Utah State Department of Health anyway, counseling other people about healthy habits!
At the health department I learned a lot about habits and behavior around food. Everyone desired to eat healthier, feed their family balanced meals, and stop overeating.
My Hobbies
I have 3 kids ages 23, 21, and 19 who really do eat healthy food, most of the time. We live in Utah, so we love to explore the mountains, hike the deserts, and kayak down the rivers.
Running is 100% my favorite past time. I’ve run 4 marathons over the last 20 years, and many half marathons.
My most recent fitness goal however is losing the weight to compete at the NPC Bikini competition this summer in Utah! That transformation is here. I’ve been doing a lot more strength training, meticulously counting calories, and the pounds fell off!
