Flavor Packed Healthier Stroganoff

If you have ever bought one of my meal plans, you know I llike to make beef stroganoff with fake noodles, ground turkey, and some laughing cow cheese. But, I was gifted some Carbe Diem pasta to try, and using the Cottage cheese alfredo I recently posted here, my new stroganoff has LEVELED UP!!!

Ingredients to make this Healthier Stroganoff

  • Zucchini – Have I told you I grow my own zucchini?? Fresh zucchini is a personal fav! Store bought works just the same though!
  • Onion – Yep! The veggie that burns your eyes haha! It is key for flavor and also nutrition packed.
  • Sliced Mushrooms – Did you know they’re low in calories and fat AND they are full of nutrients?
  • Carbe Diem Pasta – Here is how it compares to regular pasta!
    • Carbe Diem/ Classic pasta
      2 ounce / 2 ounce
      110 calories / 200 calories
      24 g fiber / 3 g fiber
      16 g NET carbs/ 39 g carbs
  • Ground Turkey – Can be replaced for ground beef but I find this to be just as yummy while healthier and often cheaper!

Pretty good macros, and it tastes JUST LIKE PASTA, cause it is!

Ingredients

  • 1 medium zucchini sliced
  • 1/2 medium onion chopped
  • 50 g mushrooms sliced
  • 2 oz Carbe Diem Pasta
  • 4 oz ground turkey
  • 1/2 cup cottage cheese alfredo sauce (see recent recipe post)

Instructions

  • Cook zucchini, onion, and mushrooms together in a skillet.
  • Cook pasta
  • Cook ground turkey
  • Prep Cottage Cheese Alfredo Sauce
  • Put it all together!
