Easy 5 Minute, Gluten Free, Low Carb Stroganoff
Delicious low fat, low carb stroganoff, made with low carb noodles, ground turkey, mushrooms and a cheesy, creamy topping.
I’ve been eating this quick, 5 minute stroganoff for lunch, every day this past week!

It started when I found some new gluten free, low carb noodles at the grocery store (my Smith’s/Kroeger store but here’s the Amazon link). I have tried the shirataki low calorie, low carb noodles, and I like them. But I hadn’t tried this new brand. These noodles were made from Palm Hearts and had only 20 calories per serving!
At first, I opened the bag and it had a terrible smell. I was sure I was going to hate these noodles. My favorite gluten free, low calorie, low carb noodle is still the Livivia brand, and the one I get at Costco called, Healthy Noodle. (I have info about both of those on my low calorie Buying guide from last year)
Anyway, after thoroughly rinsing the palm heart noodles, there was almost no flavor. It took on the flavor of my mushrooms and ground turkey and I ended up liking it.
So, just make sure you give these low calorie noodles a strong rinse, and pair it with a lot of flavor, and you’re good to go!
How this low carb stroganoff takes 5 minutes!
I’ve been prepping my proteins once or twice a week. This means, I’ll cook all my chicken for the week, or all my ground turkey. I prefer ground turkey to ground beef, although you could swap the turkey for beef in this, no problem. Ground turkey is usually lower in fat and calories than ground beef, but not always!! Make sure to check your labels. Some ground turkey has as much, if not more, fat than ground beef!
This makes every single meal quick and easy! So, for this week, I cooked 1 lb of ground turkey on Sunday. Then, all week I was able to put the turkey in different meals, but mostly this one because I’ve been eating it so much! (I go into detail here about my weekly protein prep!)
Once I had my ground turkey cooked, everything else is easy.
The gluten free pasta does not need to cook. I warm it up just by running it under hot water, and then adding it to my skillet where I was cooking the mushrooms.
First, in a skillet, sauté your mushrooms. I like to do this in some butter flavored cooking spray.
Then, add your creamy cheesy sauce to the skillet. For this, I used light sour cream and a wedge of laughing cow cheese.
Finally, stir in the gluten free low calorie noodles and the ground turkey, and warm it until everything is heated through! You could also heat everything together in the microwave. Just like that you have tasty, low carb stroganoff!
The final recipe was 217 calories, 23 grams of protein, only 9 grams of carbs, and 10 grams of fat (from the turkey!)

Low Carb Turkey Stroganoff
Ingredients
- 3 ounces lean ground turkey pre-cooked
- 1/2 cup sauteed mushrooms
- 2 tablespoons light sour cream
- 1 wedge light laughing cow cheese
- 1 serving Palm Heart Pasta (a low calorie, low carb pasta)
Instructions
- Pre-cook your ground turkey and use for different meals. Save 3 ounces for this meal.
- Cook sliced mushrooms with cooking spray, in a skillet for 4-5 minutes.
- Rinse palm heart pasta well with hot water.
- Add pasta, sour cream, laughing cow cheese into the pan with your mushrooms. Add ground turkey and mix altogether.
