I love meals like this because they’re made with normal, everyday ingredients. You don’t have to give up baked potatoes, BBQ sauce, or cheese to make a dinner that fits your weight loss goals.
This recipe is part of my high protein dinners for two series. After years of cooking for a family, I’m transitioning to making satisfying meals for just my husband and I, without ending up with a refrigerator full of leftovers. (he also likes to eat healthy, so it works for us!)

- Sized for two: no leftover pan of chicken sitting in the fridge all week.
Ingredients for Loaded Baked Potatoes with BBQ Chicken
Here is a summary of the ingredients you’ll need. Jump to the recipe card below for the full recipe.
- Medium russet potatoes: Medium potatoes work well because they have fluffy interiors and sturdy skins that hold the toppings.
- Boneless, skinless chicken thighs: I like using thighs because they stay tender and juicy. Chicken breast also works if you prefer leaner meat.
- BBQ Sauce: I used Sweet Baby Ray’s No Sugar Added BBQ Sauce to keep the added sugar and calories lower.
- Chopped broccoli: Fresh or frozen broccoli works. Steam it before adding it to the potatoes.
- Shredded cheddar cheese: Sharp cheddar adds plenty of flavor without needing a large amount.
- Salt, pepper, garlic powder, and paprika
- Cooking spray
How to Make BBQ Chicken Loaded Potatoes
- Bake the potatoes. Bake at 425°F for 45 to 60 minutes, until soft when pierced with a fork.
- Season the chicken. Cut the chicken thighs into bite-sized pieces and season with salt, pepper, garlic powder, and paprika.
- Cook the chicken. Coat a skillet with cooking spray and cook the chicken over medium-high heat until browned and cooked through. Stir in the BBQ sauce and cook another 1 to 2 minutes.
- Steam the broccoli until tender.
- Load the potatoes. Split each potato and fluff the inside with a fork. Top each with half the broccoli, BBQ chicken, and shredded cheddar.
- Melt the cheese. Return to the oven or microwave just long enough to melt the cheese, then serve.

Tips and Variations
- Save time with the microwave: poke the potatoes with a fork and microwave for 8 to 10 minutes, turning halfway, then crisp the skins in the oven for 10 minutes.
- Crispier skins: rub the potatoes with a little cooking spray and salt before baking.
- Use leftover chicken: shred cooked chicken and warm it with the BBQ sauce to skip a step.
- Add a creamy topping: a spoonful of plain Greek yogurt adds tang and extra protein.
- Finish with green onions or a sprinkle of smoked paprika for color.
- Swap the potato: sweet potatoes are delicious with BBQ chicken.
Yes! Rotisserie chicken makes this dinner even easier. Just shred the cooked chicken, toss it with your favorite BBQ sauce, and warm it in a skillet or microwave before adding it to the baked potatoes.
To save time, pierce the potatoes with a fork and microwave for about 8 to 10 minutes, turning halfway through, until tender. Cooking time will depend on the size of your potatoes and your microwave. While the potatoes cook, prepare the BBQ chicken and broccoli. Add the toppings and microwave briefly to melt the cheese.
Yes. Bake the potatoes and prepare the BBQ chicken and broccoli ahead of time. Refrigerate the components separately in airtight containers for up to 3 to 4 days. Reheat everything thoroughly, then add the cheese just before serving.
