1300 Calorie Meal Plan {Week 2 Jan 8-14}

Hi Friends! 

This week, it will be difficult to stick to a food plan, because I’m traveling!  I’m flying to Los Angeles tomorrow for a food blogging conference. I’m so excited to go, but unsure about what I’ll be eating.  

However, that won’t stop me from trying to stay on track.  I’ll be home at least 4 of 7 days this week, so a plan is still important!

Total for this plan: 1329 calories

Breakfast 264 calories

Egg white pizza

Egg white pizza! It’s been so long since I’m made this. I can’t wait!

Lunch 397 calories

Waldorf Chicken Salad 

*4 ounces cooked chicken
breasts (5 oz raw)
*1 small apple, chopped
*1 ounce walnuts, chopped
*2 tablespoons light mayo
*1 cup chopped celery
*3-4 leaves of lettuce

Snack 300 calories

Pistachio cottage cheese. 

In full disclosure, I eat this A LOT.  Pretty much every day.  But, it’s basically, cottage cheese mixed with pistachio pudding mix, and I LOVE IT!  *Here’s a “fancier version” but in all transparency, I’ll probably just use two ingredients- cottage cheese + pudding mix. 

Dinner 368 calories

Flavored oils

This morning, I added these flavorings that I got on Amazon to my oatmeal, and it was so good!  These are great for flavoring shakes, oatmeal, pancakes, etc. for ZERO calories! 

Built in portion control!!  I bought a cookie press over the holidays and I’ve been loving it!  No matter Which recipe I’ve tested (and I’ve tested many!!)  because of the size, all the cookies land at 35-37 calories. You seriously can’t beat that for a cookie!

P.S.  Remember how I told you I was going to use my emails to you as a way to get to know you better, and for you to get to know me?  Well, here’s a lot more about me:

Today marks a huge shift in my business! Since 2008, I’ve been selling portion control plates .  Well, in 2011, the USDA launched “MyPlate”, the visual representation of the dietary guidelines.   And because I was already selling a plate with this concept, my sales took off in the nutrition education space.  It’s been the biggest source of my revenue and I’ve been riding that gravy train for 15 years!

UNTIL TODAY!!  It’s official.  According to the USDA, The plate has been replaced with another pyramid.   

I don’t know what that will mean for sales, but likely they’ll start to dwindle to nothing.  But, I’m honestly not sad about it. I’ve been tired and burned out from this plate business for the last few years.  While I wasn’t quite ready, it will just give me an opportunity to jump back into food blogging with a lot more intention!  I’m actually pretty excited about it.  So, here’s to a future of MANY, MANY more recipes! haha

  1. I know this was last week, but LA has a lot of great spots for low-cal meals. My favorite place is Calif Chicken Cafe. They have many locations and options for double protein, light wraps, light dressings, etc. There’s also a lot of Persian food which is often a lean protein source (kabob), saffron rice, and shirazi (cucumber tomato salad). One of the easiest cities to go out to eat and still stay on track!
