Panera Fuji Apple Salad Copycat
Made with apples, dried cranberries, pecans, feta cheese, and red onions, this Panera Fuji apple salad copycat tastes just like the real thing!

It’s officially fall, and I have a roadside fruit stand that I pass almost every single day. He’s got delicious apples and peaches right now, and I can’t get enough!
So, with fall fruit on my mind, enjoy this Panera copycat-ish Apple Salad
Remember how I like to copy salads from my favorite restaurants??! This was doubly inspired by finding the Panera Bread Fuji Apple salad dressing in my local grocery store. While this was not a low calorie option, it was delicious! But also, If I was trying to save calories, I would have used one of my favorite low calorie sugar free poppyseed dressings instead.
Variations For this Panera salad
- I replaced the gorgonzola with feta cheese (because I don’t like the taste of gorgonzola),
- I used the Ocean Spray dried cranberries that are 50% less sugar. (amazon link here)
- I skipped the apple chips, (but if you want to get them, Panera uses the Seneca brand ones like this)
- And although I love tomatoes, Panera uses them on this salad, which I think is kind of weird!
- Also, you should definitely add chicken if you want this to be a high protein salad!

Alternative Dressings
I was able to find the Fuji Apple Vinaigrette dressing at my local Walmart, but I also love this salad with
- G Hughes sugar free poppyseed dressing
- G Hughes sugar free Raspberry vinaigrette
- Skinny Girl Poppyseed dressing
- Or, the Panera poppyseed dressing

What to serve this with for a healthy diet
Serve this salad with a main course of chicken, steak, or pork.
Panera Copycat Fuji Apple Salad
Ingredients
- 2 cups Lettuce (Red salad bowl & Flashy Lettuce)
- 1/4 cup dried cranberries 50% reduced sugar
- 1/2 ounce pecans
- 25 g red onion
- 50 g apple slices
- 1/4 cup fat free feta cheese
- 1 tablespoon Panera Fuji Apple Salad Dressing
Instructions
Substitutions I made
- – Panera uses dried apple chips in addition to fresh apples,
- -They use Gorgonzola cheese instead of feta (*but FETA IS SO MUCH TASTIER), and
- they have tomatoes in theirs. (the calories and macros are for the recipe I have as written above)
Optional
- Top with chicken!
- Use any sweet salad dressing like my favorite: poppyseed
