What we used for our chicken caprese
These simple ingredients make a healthy lunch or snack for you!
- Lettuce– Lettuce can take the place of bread so you can have this lunch low carb. This sandwich has lettuce from my indoor garden here!
- Chicken– We love chicken tenderloin for it’s low calories and HIGH protein! (Get my list of go-to protein foods here)
- Tomato– we love tomatoes, especially in the summer and especially on this Bruschetta!!
- Mozzarella– Fresh mozzarella makes all the difference. If you can’t find fresh, any mozzarella will do.
- Balsamic vinegar– this just brings all the flavors together and makes a perfect sandwich.

Ingredients
- 2 leaves lettuce
- 1 slice tomato
- 1.5 oz chicken tenderloin cooked
- .5 oz fresh mozarella
- 1 tsp balsamic vinegar
