This recipe comes together with 3 main components: bread, cottage cheese spread, and seasoned tomatoes. The order in which these are made isn’t super crucial. The important part is simply getting all of the components made and properly seasoned.

  1. Make the Whipped Cottage Cheese – To prep your cottage cheese spread, start by blending together the cream cheese and cottage cheese. Then lighten it up with some lemon zest and lemon juice. Season it with salt and pepper to taste.
  2. Marinate the Tomato Mixture – In a medium bowl combine the shallots, garlic, and vinegar. Give that 5 minutes to rest while whisking up ¼ cup olive oil, 1 teaspoon salt, and 1/2 teaspoon pepper. Ingredients

Whipped Cottage Cheese Spread

  • 1 cup cottage cheese
  • 4 ounces cream cheese at room temperature
  • zest 1 lemon
  • 1 tablespoons freshly lemon juice

Seasoned Tomato Mixture

  • 2 tablespoons minced shallots 2 shallots
  • 2 teaspoons minced garlic 2 cloves
  • 2 tablespoons red wine vinegar
  • ¼ cup olive oil
  • 1 tsp salt
  • ½ tsp pepper
  • 2 pounds ripe heirloom or cherry tomatoes 1/2-inch-diced
  • 3 tablespoons julienned fresh basil leaves plus extra for serving

  • 20-25 1/2-inch-thick diagonal baguette slices, toasted
  • 2 tablespoons toasted pine nuts
  • balsamic glaze

Instructions

Whipped Cottage Cheese

  • For the whipped cottage cheese, place the cottage cheese, cream cheese, lemon juice in the bowl of a food processor fitted with the steel blade.
