Sometimes, replacing my tortilla with lettuce, just hits the spot! Lettuce however is a lot less sturdy when compared to a tortilla and I like my wraps to be easy to eat!
For this to be portable, I like to wrap it in parchment paper. Amazon has some cheap, inexpensive but colorful 12X12 parchment paper. This makes it so much easier to eat!!

Tips on making it
- Lettuce – I like to use this for the wrap AND put some on the inside! Lettuce is so low calorie that you can honestly put as much as you’d like! I got mine from my indoor garden!!
- Turkey – This is a great source of lean protein! I get the Kirkland brand that is 60 cals for 2 slices.
- Mild Cheddar Cheese – Or whatever sliced cheese you have on hand! I typically buy thin sliced so it is only 70 cals per slice.
- Tomato – Keep in mind that these things are loaded with vitamins and minerals and antioxidants! And they add some nice color to the wrap!
- Shredded Carrots – Did you know these promote good eye health? I find if they are shredded, they are small and soft enough to go in just about anything!
- Light Mayo – I feel like light mayo adds just as much flavor as regular mayo, but it is healthier!
- Mustard – Adds a ton of flavor but also has anti inflammatory components which makes it the perfect sauce for a light lunch!

Ingredients
- Lettuce
- 2 slices turkey
- 1 slice mild cheddar cheese
- sliced tomato
- shredded carrots
- 1 tbsp light mayo
- 1 tbsp mustard
Instructions
- Lay down lettuce on top of parchment and fill with ingredients
- Use parchment to roll it all together
- Cut in half and enjoy!!
