Ok- we all know, this isn’t actually pizza. If you want the real thing, there are lots of healthy, low calorie pizza recipes out there. My favorite is this 2 ingredient, Greek yogurt pizza.

But, even with all the healthy ingredients, you aren’t going to have a truly low carb pizza, unless you just skip the crust altogether.

Which is fine! I promise. You can have a cheesy, pepperoni, tomato, topping on anything, and it’s going to be good.

So for this, I DID skip the crust altogether and stuffed my pizza toppings into a pepper instead. You could also do this with mushrooms!

What are the calories and macros for the mini pepper pizzas?

For each mini pepper pizza, I got 19 calories! I also got 2 g protein, 1 g carbs, and 1 g fat. Wahoo! I even weighed every component of the pepper pizza, so that this would be accurate.

I decided to make these little mini peppers into an appetizer style snack. Without the pizza crust, there’s almost no carbs. Definitely a low carb option with only 1 gram of carb per pepper pizza.

The ingredients I used on these mini low carbohydrate pizzas were:

  • The mini bell pepper (2 calories)
  • The tomato sauce (3 calories)
  • The fat free mozzarella cheese (6 calories)
  • and the mini pepperoni. (5 calories)

All the carbs in this recipe, according to myFitnessPal, are coming from the tomato sauce. Bell peppers do have carbs, but for the mini half bell, it was 0.48 carbs, and MyFitnessPal reported it as zero.

I also like my food low fat, to save on the calories. So, I used fat free mozzarella for this mini pepper pizza, which I find at Walmart. And it’s almost the only store I’m able to find it out.

You are welcome to use regular mozzarella, as it’s not too high in calories or fat, but if you can find the fat free, you’ll save 1/2 the calories!

This healthy snack can fit into any diet meal plan. (see my current meal plans here, sorted by calories or diet style). You’ll be satisfied with the pizzas, without slowing any weight loss progress you might have been experiencing.

Tips for Making the Stuffed Pepper pizzas

You can make these low carb pizzas a few different ways.

If you are in a hurry, you can simply slice the pepper lengthwise, and top it with your desired toppings, like cheese, other veggies, or meats. Then, you’ll broil your pizzas until the pepper starts to get soft and the cheese is melted.

The other way, is to pre-cook the mini bell peppers before you add the toppings. This gets them nice and soft, and even a little crispy on the outside, which I like too!

Either way, just know these pepper pizza’s are simple.

  1. Slice mini bell peppers.
  2. Arrange on a cookie sheet
  3. Top with healthier pizza toppings.
  4. Bake in oven at 425 for about 10 minutes
  5. Add salt and seasonings as you like!

  • 9 grams mini bell pepper one mini bell pepper, sliced in half
  • 7 grams spaghetti sauce about a teaspoon
  • 4 grams fat free mozzarella just a sprinkling!
  • 1 gram mini pepperoni slices

Instructions
