Having a quick, low calorie treat has helped me lose weight and keep it off. Recipes like this weight watchers brownie cheesecake makes me feel like I’m indulging, while in fact, it’s helping me stay on my plan.

Why you’ll love this Weight Watchers Cheesecake Recipe

If you don’t already know, ever since the 1980’s I’ve been a fan of Cool whip. It was even my first password on my Apple Macintosh 1989 computer! (here’s more about Cool Whip in this Peanut Butter whip recipe) So, the fact that this recipe for a low calorie brownie treat had cool whip, I was extra hooked.

I also used the cheesecake flavor of the sugar free pudding mix. I use the sugar free pudding mix quite a bit in cooking and baking, but I RARELY make pudding. Is that weird?

WW Cheesecake Ingredients

You only need three ingredients to make this brownie cheesecake:

  1. A fiber one brownie. You can find this at any grocery store near the granola bars. They are only 70 calories per brownie, making it a perfect base for this treat.
  2. Zero sugar cool whip. Cool whip is the main ingredient in a classic “weight watchers” cheesecake. Those weight watchers fans love their cool whip, as do I!
  3. And finally some sugar free pudding mix. This gives the cool whip a little flavor, while thickening it up to be able to bite into it.

Weight Watchers Cheese Cake Recipe Variations

There’s so many different ways you can make a “weight watchers cheese cake” different. Most of them start with cool whip, but from there you can add different sugar free pudding mixes such as

  • Sugar free pistachio pudding mix
  • Sugar free lemon
  • Sugar free butterscotch
  • Sugar free white chocolate
  • Sugar free Vanilla
  • Or Sugar free Cheesecake.

These all make tasty “weight watchers cheese cakes”

I realize this is not a “healthy” recipe, but some days, I like throwing healthy out the window to indulge in a treat that still fits my calorie budget for the day. And this brownie cheesecake, at 40 calories, definitely does not derail my progress (I’m 6 weeks away from another Bikini show, so things are getting intense with my food weighing and measuring!).

And if you’re doing the new weight watchers, this is only 1 point! (you can check if it’s one point for you with this personal points link)

Weight Watchers Brownie Recipe Tips and Tricks

This recipe couldn’t be easier. The only trick that will help is to make sure you stir in the pudding mix until it’s smooth, or let it sit to dissolve. There’s nothing worse than feeling those grains, when it should be dissolved.

How to track a Weight Watcher Cheesecake

The easiest way to track any weight watchers food is to be a member to utilize their current tools. They have changed the way they calculate points, and which foods are zero points, many times over the last few decades. Store these in the freezer! When you are ready to eat one, set it on the counter for ten minutes so they are soft enough to bite into, but still firm enough to enjoy!
