If you like bananas, this recipe is for you. This simple breakfast treat has a very strong banana flavor to it. I’ve tried this banana microwave mug soufflé with different toppings, and I love them all.
I’ve topped this banana soufflé with:
- Cinnamon
- Whipped cream or fat free cool whip
- More bananas
- Sugar free chocolate syrup
- Chocolate chips
- Walden farms zero calorie caramel dip
- Peanut butter or peanut butter powder
- Almond butter
Pretty much anything that tastes great with bananas, tastes great with this three minute banana soufflé!
Why this mug banana soufflé is a healthy recipe
It’s no secret that I’m a huge fan of these two ingredients. Bananas and Eggs! I literally eat them every day. I ate them during my entire bikini prep and weight loss last year. Every day! (read that transformation story here) Here’s why!
- Bananas! Full of vitamins, minerals, fiber, and potassium, bananas are a powerhouse food. It keeps you full, fuels your workouts, and balances your fluids. Most regular size bananas are about 100 calories. I buy the smallish ones (about 80 grams) and those are about 80 calories with 19 grams carbs, and 2 grams of fiber. - Eggs! Another power house food. Eggs have 78 calories for the large ones, and 6 grams of protein. But not only are they low in calories and high in protein, they are also a good source of healthy fat, and fat soluble vitamins D&E.
How to make this healthy microwave banana soufflé recipe
To make this simple, quick, 3 minute soufflé, first mix the eggs with a banana. Mix it well. Even use an immersion blender or hand blender if you have one.
Then, pour the mix into a microwave safe mug, sprayed with cooking spray. The mug should be tall enough so the soufflé doesn’t spill over.
Then, set your microwave for 3 minutes and cook!
Once it’s done, turn it onto a plate. You can top it with any of your favorite toppings. Then, slice into it and enjoy!
What to eat with your banana soufflé
This breakfast or dessert dish already contains fruit and protein. If I were to eat something with it, I’d choose a grain and have a caramel rice cake! That would be so good together!

Made this and added a bit of maple syrup to the mix and that was so good! Kids loved it (one of them hates eggs but still loved it) and it was a real quick weekday breakfast to make. Will do this again!
