If only I could trust myself around a jar of peanut butter, but I’m just not that strong! 1 spoonful of peanut butter generally leads me to several spoonful’s, until I’ve had 1000 calories of peanut butter and still could be ready for a meal. LOL.
But, that’s exactly why I LOVE peanut butter powder! I get the tastiness of peanut butter, without the calories and fat.
1 tablespoon of peanut butter powder (from Peanut butter & co) has
- 25 calories
- 2 g carbs
- 2.5 g protein
- and 0.75 g fat
Not too shabby!
So, while I’ve found LOTS of ways I like to use peanut butter powder (check out my list here) , one of my favorite things to do is use it in protein recipes! You don’t need to buy peanut butter flavored protein powder, when you can just use vanilla protein powder and add peanut butter powder to it.
Which is exactly what I did with these cookies.
I made these cookies two different ways. One, I made the dough and just ate the balls, like you would with protein energy balls.
But also, I cooked the balls in the microwave for 1 minute to turn them into cookies!
For the 1 minute cookie, these are to be eaten right away. There is no saving them for later. They would get too dry and crispy. But warm, they are perfect!
1 Minute Peanut Butter Protein Cookies
Ingredients
- 1 scoop Vanilla Protein Powder (CSE)
- 2 tablespoons peanut butter powder
- 1 tablespoon peanut butter
- 1 tablespoon honey
- 1.5 tablespoon lowfat milk
Instructions
- Mix all ingredients together until consistency of cookie dough.
- Divide into 4 balls. If making no-bake, flatten cookie dough balls and mark with fork.
- If cooking, line a microwave safe plate with a parchment paper and cook at full power for 1 minute!
