Sweet Citrus Green Salad {100 calories and Perfect for a Potluck!}

10 Cups of this delicious sweet green salad is made with lettuce greens, oranges, red onion, feta cheese, sunflower seeds and a low calorie poppyseed dressing. It’s a perfect side dish for feeding a crowd.

Every Sunday we invite as many people as we can to our house for dinner, and I always prepare a green salad! (I’m trying to create recipes and links to ALL our group meals on this post here!)

Last night, we ended up with 13 people. I made this Sweet Green Citrus salad and it went perfectly with our Chicken salad croissant sandwiches.

I used the Panera poppyseed dressing I found in our produce department a few weeks back. It only has 12.5 calories per Tablespoon, and it’s DELICIOUS!!

How I feed a crowd delicious food and stick to my diet!

I have a few tricks for feeding my family, friends, and neighbors on Sunday nights, without completely backtracking on my diet.

It’s not easy though! I have absolute empathy for those of you in the throws of child raising, because I know how it is to ALWAYS be in the kitchen preparing food for your family. Quite honestly, I didn’t have the strength to do it back then. It’s only been since we became empty nesters that I’ve been able to have more discipline by simply staying out of the kitchen!

However, Sunday’s my cooking day. And truly I LOVE cooking for my family. So, here’s my quick tips for sticking with my diet on Sunday’s.

  • I always prepare a green salad to go with our dinner. Even if I just eat the salad and sneak a little bit of chicken from the fridge to put on top of it, it’s really no different from what I’m eating every day on a calorie deficit.
  • Spending the afternoon in the kitchen, I usually have a few zero calorie soda’s to sip on, so I don’t mindless munch on the food I’m preparing. I’m good with “tasting” the food, but there’s a huge difference in tasting, and mindlessly throwing a chunk of sourdough bread in your mouth because it was the end of the loaf. LOL If I am in the mood for mindlessly eating something, just because I enjoy mindlessly eating, I’ll take out a bag of baby carrots, and let myself mindlessly eat while I cook.
  • I try to weigh things for my plate before my kids arrive. So, If I Am going to eat a slice of sourdough with my meal, I just weigh it before hand, and that way I can track it and enjoy it. (read this recent article as to why I’m tracking food to maintain my weight loss!) Also, here’s an Instagram post I made about tracking homemade bread.
  • With a meal like our chicken salad sandwiches on croissants last night, you can see in the picture that I had half of the croissant. The full croissant (from Costco) had 300 calories. So, 150 calories was perfectly fine, filling, and I was still participating fully in dinner!
  • And lastly, when you have adult kids, there’s no reason to justify what you’re eating to them, or make a scene about it. I can promise, 99.9% of the time, they aren’t looking at your plate, and my kids, at least, are just there for a free meal and good company! LOL
  • And finally, because I just LOVE to bake cookies, I avoid eating the batter, I only eat one cookie after dinner, and I send the rest home with the dinner guests! I’m definitely not strong enough to keep those around after Sunday night.

Ingredients

  • 8 cups chopped lettuce
  • 1 medium orange
  • 1/2 medium red onion
  • 1/2 cup sunflower seeds, without shells
  • 1/2 cup dried cranberries
  • 1/2 cup fat free feta cheese
  • 1 cup panera poppyseed dressing to taste

Instructions

  • Mix together the greens, orange, chopped onion, sunflower seeds or dried cranberries, and feta cheese.
  • Top with dressing just before serving. (just enough to coat salad)
