Frozen Pistachio Cool Whip Dessert Recipe {Sugar Free-High Protein}
With just 3 ingredients, you can have this frozen pistachio cool whip dessert tonight! Sugar free cool whip, sugar free pistachio pudding mix, and optional: Vanilla protein powder!

It’s true I’ve been obsessed with cool whip since 1980!! Not sure if I’ve mentioned it before, but in the late 80’s when my family got our first computer, my password was COOLWHIP. LOL.
Anyway, I’ve used cool whip in a few recipes here, and I might end up making more. But my favorite is this Frozen Weight Watchers, Peanut butter whip. And then the topping for this weight watchers brownie.
But since I’m also obsessed with sugar free pistachio pudding mix, I decided to make a crazy simple version of “ice cream”. It’s just a frozen dessert with the pistachio mix and cool whip blended together, but it’s SO delicious! I literally ate this every day for at least a month.

In the last two weeks though, I stopped buying the cool whip, just so I would stop making it. I was eating a little TOO much of it every day, and I knew I was just getting addicted.
But, that doesn’t mean you can’t enjoy the recipe.
What I love most about this, is that it not only freezes quickly, but it never gets rock hard after frozen. Leaving it out for just 2-3 minutes, and I can already stab a spoon into it and enjoy it.
Now, while I NORMALLY make this dessert with just the pudding mix and sugar free cool whip only, I have made it a few times with some protein powder in it. This DOES taste great (as in, you shouldn’t be able to taste the protein powder), but if you have a protein powder that’s gritty or has an aftertaste, you probably won’t like this. I recommend either Clean Simple Eats vanilla or UMP vanilla.
Now, this recipe makes 4 servings. I’m using an entire container of cool whip after all. So, the overall calories are only acceptable if you can portion this out! The best thing I can do is portion it out ahead of time into four different containers. This way, I can get only one out at a time, rather than keep scooping into it and end up eating the entire thing. So, 4 containers is critical to keeping the calories on this acceptable for me. Sugar Free Frozen Pistachio Cool Whip Dessert Recipe
Ingredients
- 8 ounce sugar free cool whip
- 2 tablespoons sugar free pistachio pudding mix
Optional
- 1 scoop Vanilla protein powder (UMP)
Instructions
- Mix all ingredients together. Divide into four containers and freeze for 3 or more hours.
