I know how hard it is to stick to a diet when your life gets busy! When I was successful at weight loss at age 46, I truly believe it had a lot to do with Covid slowing my life down. Without anywhere to go, or people to see, I found it easier to stick with my plan.

But, here we are 5 years later, and my life is getting crazy again. But, I’m determined to make it work. I am determined to eat healthy and on plan, no matter what life throws at me.

And right now, I’ve been leaving the house early a few days a week and I had to adapt. I have a class all day on Thursdays, and on Monday’s, I’ve been traveling to our vending machines (My new business. lol).

So, I’ve been making a breakfast burrito into a taco. But, here’s my hack:

Stuffing a tortilla with egg whites can get messy and drippy! That’s why I like to add the tortilla before the eggs have completely cooked. This keeps your eggs INSIDE the tortilla, because it’s all cooked together.

High Protein Portable Breakfast Taco

Ingredients

  • 2 medium egg whites
  • 1 medium egg
  • 1/4 cup fat free cheddar cheese
  • 1 8" low carb tortilla
  • 30 g avocado

Instructions

  • Whisk egg with egg whites and pour into an 8-10 inch non-stick pan. Tip the eggs around till edges start to cook.
  • Add the cheese and let melt into the eggs for just 1 minute.  Add the tortilla to the top, just before the eggs are completely cooked.   Flip eggs so the tortilla is now on the bottom of the pan.  Let the tortilla get a little bit crispy. Spread avocado on top, and fold over like a taco.
