Why I Love Microwave Asparagus
Today I wanted to share with you how I’ve been cooking my asparagus. Because it’s so fast and easy, it will have you eating this every. single. day.
OK here’s the deal, I’ve been eating a ton of vegetables the last year and a half, since I lost weight and kept it off. I’ve never loved vegetables more in my life. It’s crazy how when you are on lower calories, and you’re taking out a lot of processed foods, that you just start craving vegetables. You realize how much volume you can eat for so few calories, you’ll just start adding them wherever you can.
So, as a result, I love asparagus! Also, did I mention 100 grams of asparagus is only 20 calories?!?! (see my list of calories in all the veggies here)
Asparagus is great for a few reasons. It’s rich in vitamin K, it’s an excellent source of folate, and an excellent source of Vitamin C. And, it’s only 20 calories! That’s really why I eat it!
The best ways to cook it, I think, are roasted, sautéed on a skillet, and then today’s 1 minute microwave hack. So, let me tell you how I do it.
How to Make Microwave Asparagus
I have been weighing my vegetables, so I don’t over do it. (I tend to over do everything). I recommend weighing your asparagus if you’re trying to keep to a particular calorie count!
So, all I do is snap off the bottom of the asparagus (the woody part is too tough to eat).
Then, I’ll weigh one fistfull of asparagus, which is usually around 100 grams.
Now you can either do this method with a paper towel, or a kitchen towel if you don’t have a paper towel. All you do is place your asparagus inside the towel. Roll it up. And then put it in the microwave for 1 minute. That is all.
Once it’s cooked, I season it with cooking spray and salt, and that’s all I need. Give this microwave asparagus cooking hack a go! Maybe you’ll end up loving asparagus as much as I do haha!

1 Minute Microwave Hack for Cooking Asparagus (the paper towel method)
- 100 grams asparagus
- 1 spray cooking spray
- 1 sprinkle kosher salt
- Break the woody ends off of a fistful of asparagus (100 grams worth)
- Roll in a paper towel or kitchen towel.
- Microwave on high for 1 minute.
- remove from towel. Spray with cooking spray and sprinkle with salt.
