Healthy Substitutions for this Cheesy Cauliflower Rice
Standard white rice has 200 calories per cup. For 1 cup of cauliflower rice it’s only 20 calories! How’s that for a bargain!
So, to make this cheesy cauliflower rice I used:
- 2 cups frozen cauliflower rice. I have a large bag from Costco, that you can just put in the microwave for 6-7 minutes, in the bag and all. While it’s cooking, I prepare the cheese. SAVING 360 CALORIES from 2 cups of regular rice.
- 1 tablespoon cheese powder. Have I talked about the cheese powder before? I used it on my scrambled eggs the other day here. I bought cheese powder on Amazon for $9.41 for 1 lb. It only has 25 calories per tablespoon, and I’m convinced it’s going to last me forever! (SAVING 85 calories compared to 1 ounce full fat cheese)
- 1 ounce fat free cream cheese– combining the cheese powder with the fat free cream cheese, makes a super creamy cheesy flavoring. (saving 60 calories from full fat cream cheese)
- 1 tablespoon almond milk to make it runny enough to stir into the cauliflower. You can add more almond milk if you need to, but don’t over do it.
And just like that, you have cheesy cauliflower rice that makes for a great side dish to any meal, is low in calories, and tastes great!

Skinny Cheesy Cauliflower Rice
Ingredients
- 2 cups frozen cauliflower rice
- 1 tablespoon powdered cheese
- 1 ounce fat free cream cheese
- 1 tablespoon Almond milk (vanilla unsweetened)
Instructions
- Cook cauliflower rice in the microwave, according to package directions. (Mine was 5-6 minutes)
- While cooking, whisk together cheese powder, fat free cream cheese and almond milk. Keep whisking until no longer lumpy.
- Fold cheese into cooked cauliflower rice, and enjoy!
