What you need to know about Microwave Protein Mug Cakes
Ok so here’s the thing. This isn’t the tastiest recipe out there. In fact, this protein recipe is what I consider a “functional food”. It’s definitely not winning any baking contensts, and it does NOT taste like a cupcake! However, when you have physique goals, sometimes you sacrifice a little flavor (or lack of flavor), to get in your food!
With that being said, this basic microwave protein mug cake has a lot of potential! I’m definitely experimenting with different proteins and flavors. I’m a big fan of using Walden Farm’s sugar free syrups, flavor extracts, sugar free jello, and sugar free pudding to flavor things without really changing the calorie count.
I’d totally suggest trying out different flavor combinations to find something you like! No matter what flavor add ins you try, you can stick to the basic recipe for these microwave protein mug cakes.
(and FWIW- Don’t leave off the whipped cream!! This recipe needs it!)

Microwave Minute Protein Cakes
Equipment

Ingredients
- 1 tablespoon Almond milk (vanilla unsweetened)
- 1 large egg
- 1 tablespoon almond butter
- 1 scoop Vanilla Protein Powder (CSE)
- 1/4 teaspoon baking powder
For cinnamon roll flavor
- 1/4 teaspoon cinnamon
- 1/4 teaspoon stevia
- 2 tablespoons whipped cream
Instructions
- Whisk almond milk, egg, and almond butter together. In a separate bowl, mix protein powder, baking powder, cinnamon and stevia.
- Combine wet and dry ingredients. Pour them into a ramekin or microwave safe mug, sprayed with cooking spray.
- Place ramekin in microwave and cook for 60 seconds, on 50% power. Check for doneness by touching the top of the microwave cake. If it's wet, return to microwave for 30 more seconds, at 50% power.
- Remove from microwave. Drop out of ramekin onto a plate and top with whipping cream and more cinnamon/stevia mixture.
