I have quite a few ninja creami recipes on this blog, so I was somewhat surprised I hadn’t posted a pumpkin version. Maybe it’s because pumpkin is classically a food we only buy in the fall, and no one really wants to make ice cream in the fall. But, considering we can buy canned pumpkin puree all year long, and technically, we can eat ice cream all winter with as much time as we spend indoors.

So, here I am. With some YUMMY Fall inspired pumpkin protein ice cream.

I’ve been thinking lately about how long it’s been since I used protein powder to actually make a protein shake. And it’s been a LONG time. I like to create recipes for protein shakes (here’s a protein pumpkin shake), but even with the exact same ingredients, protein ice cream is 1000% more satiating to me than protein shakes. The act of eating a food (and chewing), rather than drinking your food, sends more satiety signals to your brain and stomach that you will help you get full more quickly.

Tips for Success

I feel like I’ve made enough protein ice cream in my Ninja Creami that I could write a full book on my tips! So, here’s my top tips.

  1. Let your frozen container thaw 10–15 minutes on the counter. I’ve never had to “respin” to make the ice cream creamier, and I’ve never had to add any extra liquid. Slightly defrosting the protein mix is enough to blend it very nicely.
  2. I prefer milk (like actual cow’s milk) to nut milks like almond milk. I WILL use almond milk just to drop calories, and I will use water blended with protein powder to drop calories even further, but for the creamiest ice cream, cow’s milk is the way to go.
  3. A whey or whey-casein blend works best for texture. And I love Clean Simple Eats for the different flavors of protein powder they carry!
  4. For even creamier ice cream, try adding sugar free pudding mix. This does enhance the sweetness slightly, but the real magic is in trying to prevent your ice cream from getting too icy, and more creamy.
  5. I always double my recipes to make “two servings” at a time. Mostly because my creami containers are kind of too big to have it make sense for only one serving. So, while this recipe is written for one (to get accurate calories and macros), you can double it and keep it all in one pint container.
  6. Glycerin! Have you tried it? “They say” if you use a tablespoon of it, that you can refreeze your ice cream and not have to re-mix it. I haven’t tried it enough to test it, but I would love to know if you’ve tried it.

  • 1 square graham cracker
  • 1 tablespoon Pumpkin Pie spice feast mode

Instructions

  • Freeze for 4+ hours.
  • Remove from freezer and let sit on the counter for 15 minutes to partially thaw. When I do this, I never have to “re-spin” or add more liquid. It’s always smooth and creamy.
  • Spin in the Ninja Creami on the "lite" setting.
  • Top with sugar-free whipped cream + a sprinkle of Pumpkin Spice (feast mode)
