Low Carb Cookies and Cream Chocolate Waffles
Similar to a chaffle, but without the cheese, this low carb cookies and cream chocolate waffle is quick, easy and delicious!

That’s why I love experimenting with delicious foods like waffles, while reducing the calories, and only making enough for one meal.
I wanted to make a cookies and cream chaffle (a cheese-waffle), because I’ve seen other bloggers create one, and it looked so good! But, since I made this without cheese I just couldn’t call it that.
Instead, I definitely start with the eggs to have a high protein breakfast. But then, I added a bit of self rising flour, and baking powder (I was having trouble getting a rise out of the flour alone).
To sweeten up the low carb chocolate waffle, and to keep it low calorie and low carb, I used the Monk Sugar (a zero calorie sweetener you can get at Costco or Amazon).
Then, to make the chocolate waffle actually have chocolate, I used cocoa powder! Cocoa powder is very low in calories (only 10 calories per tablespoon of cocoa powder), and high in flavor! You only need 1 tablespoon.
Depending on the size of your waffles (I used the MINI DASH!), you might get 3-4 chocolate waffles. But since you may get more or less, I caclulated the calories and macros for the entire recipe. So, no matter how many waffles you get, you’ll have: 147 calories, 14 grams protein, 8 grams carbs, and 6 grams fat are for the ENTIRE recipe!!
Here’s how I made this low carb Chocolate Waffle recipe:
- 1 egg
- 1/4 c egg whites
- 1 tablespoon self-rising flour
- 1 tsp baking powder
- 1 tablespoon monk sugar (or zero calorie sugar)
- 1 tablespoon cocoa
Whisk all ingredients together. Pour over hot waffle iron, and cook until done!
Add 1 tablespoon whipped cream (the kind in the can) to make it a sandwich, or put it on top!
Give this low carb chocolate waffle a try! You could always add different toppings such as berries, just remember to adjust the macros for that. And to be honest, I think the cream in the middle is just perfect!

Hi, what if I used almond or coconut flour instead?
How would it be the carbs intake?

There would be fewer carbs, but a lot higher in calories. So, if you are just looking to reduce carbs and indifferent of calories, you could try that.
How can I make these vanilla instead?

Take out the cocoa, and add 1/4 teaspoon of vanilla extract.
