Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 2 large carrots diced
  • 2 stalks celery diced
  • 1 medium zucchini diced
  • ½ head cabbage chopped
  • 1 cup kale chopped
  • 1 14.5 ounces can diced tomatoes
  • 4 cups chicken broth if you want it more brothy you can add more broth

Seasonings

  • 1 tablespoon salt
  • black pepper to taste
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • ¼ cup chopped parsley

Instructions

  • Chop onions, carrots, celery and zucchini. Sautee in a pot with vegetable oilfor 4 to 5 minutes.
  • Add the garlic and seasonings and stir for another minute.
  • Add the cabbage and kale and cook until it starts to wilt.
  • Add broth and tomatoes and let it cook uncovered for 10 minutes.
