Ingredients
- 2 tablespoons olive oil
- 1 medium onion diced
- 3 cloves garlic minced
- 2 large carrots diced
- 2 stalks celery diced
- 1 medium zucchini diced
- ½ head cabbage chopped
- 1 cup kale chopped
- 1 14.5 ounces can diced tomatoes
- 4 cups chicken broth if you want it more brothy you can add more broth

- 1 tablespoon salt
- black pepper to taste
- 1 tsp dried basil
- 1 tsp dried oregano
- ¼ cup chopped parsley
Instructions
- Chop onions, carrots, celery and zucchini. Sautee in a pot with vegetable oilfor 4 to 5 minutes.
- Add the garlic and seasonings and stir for another minute.
- Add the cabbage and kale and cook until it starts to wilt.
- Add broth and tomatoes and let it cook uncovered for 10 minutes.
