In the end, I found I liked it best baked in an 8 inch cast iron skillet. But, many people who make this recipe on social media (tiktok and instagram) are using a cookie sheet lined with parchment paper.

Maybe my chicken was less fatty than others, but mine stuck to the paper too much for me. I know I have good parchment paper too, because I buy it at the restaurant supply store. But either way, even when the chicken crust stuck to the paper or the pan, it was still soooo delicious!

If you do want to use a cookie sheet still, the BEST way on a cookie sheet with a silicone mat!!! No sticking to the bottom at all!!

How to make this pizza

To make this Low carb chicken crust pizza, I mix 1 egg for every half pound of ground chicken. You can season it from here however you like.

Then, of course the topping is what really makes this pizza next level. Because I wanted it super cheesy, but still somewhat low in calories, I did a mix of regular mozzarella with fat free mozzarella! But you can do any combination you please.

After you spread your ground chicken out, to a crust like thickness, bake for 15 minutes in the oven.

Store leftovers in the fridge. SUPER yummy the next day too!!!

Ingredients

Crust

  • 8 ounces Ground chicken
  • 1 large egg
  • 1 dash salt and pepper to taste

Toppings (Optional ideas, but it's what I used)

  • 1/4 cup mozzarella cheese
  • 1/4 cup fat free mozzarella cheese
  • 1/4 cup parmesan cheese
  • 1/4 cup spaghetti sauce
  • 1/4 ounce mini pepperoni

Instructions

  • Preheat oven to 400 degrees.
  • In a small bowl, combine ground chicken with egg and add salt.
  • Spread the chicken and flatten to a crust like thickness in a well greased skillet, or a piece of parchment paper on a cookie sheet.
  • Bake for 15 minutes in the oven.
  • Remove from oven and top with pizza/spaghetti sauce, cheese, and pepperoni’s (or any topping you choose).
  • Cook for 5 more minutes for the cheese to melt.
  • Remove from the oven. Cut into 4 equal pieces (If you’re tracking the calories and macros), and ENJOY!!

Notes

I’ve seen people use parchment paper on a cookie sheet, which you can do. I also tried it a few times with a cast iron skillet. Both ways my chicken stuck to the parchment paper and the pan. It was MOSTLY OK when the cast iron skillet was well greased. BUT, the BEST way was on a cookie sheet with a silicone mat!!! No sticking to the bottom at all!!
