Tasty 75 Calorie Brownie From a Brownie Mix

Recently, I purchased a mini cast iron skillet from Hobby Lobby (similar to this skillet from Amazon). I instantly began imagining the small servings of food I could make in the skillet.
Baking food for one serving, or minimal servings, is the easiest way to practice portion control. If you make 4 brownies vs 24 brownies, the worst you could do is eat 4. Because of this, I love making small, single serving treats! That’s why this healthy brownie mug has been my go-to until now! (Find my favorite Low calorie desserts here!)
I just wanted to make 1 brownie in the skillet, so I decided to use my toaster oven. I’ll admit, I love my toaster oven! I love it for roasting veggies as well as baking.
How to calculate calories for a brownie mix
After weighing a regular brownie mix, I calculated that every 2 tablespoons of the brownie mix contained 100 calories. But, since my skillet was a little big for just 1 brownie, I actually made four. It’s still better than 12, amiright??
So, my final recipe was:
- 6 tablespoons brownie mix
- 1 tablespoon egg whites
- 1-2 tablespoons water.
Mix together. Pour into a small (3 inch) cast iron skillet or mini cake pan. Bake in the toaster oven at 350 for 7-8 minutes
I cut the brownie into 4 bars, but added a strawberry and whipped cream. Brownie alone would have been 75 calories!
The toaster oven cooks small amounts of food SO FAST!!

- Mix together all ingredients.
