Ingredients

  • 1 medium banana
  • 1/2 cup egg whites
  • 1/2 teaspoon baking powder
  • 1/2 cup oats

Instructions

  • Mash banana and mix egg whites, baking powder, and oats in a bowl.
  • Spray a hot skillet with cooking spray.
  • For mini pancakes, use 1 tablespoon batter and cook both sides.

        I made these today. I added a scoop of Unflavored protein powder and a small whole egg. It was delicious. I figured the calories on mine to be 423 and protein to be 32.3g if I was to of eaten the whole batch. I made mini waffles with it and it made 5.5 mini waffles. Each waffle was 2 oz. Thank you posting this recipe. I topped my one waffle with a tablespoon of vanilla Greek yogurt.

    1. These were tiny pancakes. Only 1 tablespoon each. So it made 8 tiny pancakes. If you eat the whole recipe or make two big pancakes, it would be 320 calories for the whole recipe.

    These are great! I made your cottage cheese egg white pancakes yesterday so I was excited to try these today. I used oat flour instead, which worked well, but I think oats would have been great too. I added a bit of cinnamon and some salt. Cooking these low and slow was the way to go! The first few I did too high heat and the middles were mushy, but after lowering the heat and cooking then longer they were perfect. Love this simple recipe!
