How to make these Graham Cracker Ice Cream Sandwiches
Ingredients for an Ice Cream Sandwich
In order to make these ice cream sandwiches, you only need 4 ingredients. Isn’t that amazing!?
This treat is quick and easy. I simply mixed low fat greek yogurt with berries and cool whip or whipped topping. Placed between two graham crackers and put it in the freezer. (similar to my low calorie yogurt pie!)
I only let it sit for about 1 hour, than ate it. Partially because I couldn’t wait, but secondly because I like my “ice cream” soft and not frozen solid.
For this recipe, I decided to go the strawberry flavor route. However, there are all kinds of combinations you could make. If you want something a little closer to an original ice cream sandwich, you could try using chocolate graham crackers with vanilla greek yogurt and whipped topping in the middle. Another way you could switch up the flavor is by adding a bit of zero sugar Jell-O flavoring along with your choice of fruit. For example you could try their banana cream with bananas or their raspberry flavor with actual raspberries added in. While I haven’t tried these flavor combos specifically, I kinda think it’s hard to go wrong.
Now, if you do try another flavor combo when making your own healthy ice cream sandwiches, make sure to adjust your macros accordingly. Different fruits have varying calorie counts, so it helps to know that as you make this dessert.

Ingredients
- 1 sheet graham cracker
- 1/4 cup low fat strawberry greek yogurt
- 2 tablespoons whipped topping
- 1-2 medium strawberries
Instructions
- Mix yogurt with strawberry and whipped topping. Spread between two graham crackers and freeze!! Not too long, so it's soft enough to eat, yet frozen enough to taste like ice cream!
