Mint chocolate chip fans, unite! I would have never imagined mint and chocolate could go so well together if it weren’t from mega hits like Thin Mint Girl Scout cookies, or Mint Oreo’s, or Andes’ Chocolate. Thanks to these products, Mint and Chocolate is as normal as peanut butter and Jelly!
As a side note, whenever I find a way to use produce from my indoor Hydroponic Garden, I’m going to add a tag: Gardyn! And one such recipe is this mint chocolate chip protein ice cream. I used mint leaves from my Gardyn, because the mint grew EXCEPTIONALLY well.
Why I made the Mint Chocolate Chip Protein Ice Cream
- I decided for a mint cookie flavor because Clean Simple Eats actually sells a mint chocolate cookie protein powder that happens to be a FAVORITE in my family. My sons, my son in law, and my husband ALL order the mint cookie protein ice cream. However, when I’m writing recipes to share, I don’t LOVE using protein powder you might not have at home. So, I usually try to use vanilla protein powder, and then flavor it with other things. I can get VERY creative with flavoring things (Like these low calorie ways I flavor protein balls)
- Secondly, I decided on the mint flavor because the mint in my Hydroponic indoor garden grew VERY WELL. Here’s a picture of it. I’ve been so impressed with how easily I’ve been able to grow some things.
- Third, I tried to make it a mint OREO cookie ice cream, rather than using chocolate chips, but the cookie as a mix-in was so much higher in calories, and it was mixed together, that I didn’t really get any nice big bites of cookie. The chocolate chips were much prettier. LOL. And after all, I do eat with my EYES first.
- And lastly, I REALLY want to build out my blog with a LOT of Ninja Creami Recipes! I can’t believe I lived without this thing for so many years. It has made my bikini prep’s completely enjoyable because I feel like I’m eating dessert every single day. (here’s my other Ninja creami recipes)
Notes on Ingredients I used for this Mint Chocolate Chip Protein Ice Cream
- Milk! Although lowfat milk is higher in calories than almond milk, I actually like using them both. I’ve made this exact recipe using milk and using almond milk, and I honestly couldn’t tell the difference. Milk contains more natural sugars, but I think the consistency MIGHT (and it’s very slight) Might be a little creamier than the almond milk. But honestly, it was pretty close to the same. Just use whatever you have on hand.
- Protein Powder- Like I mentioned, Clean Simple Eats does have mint cookie protein powder, that’s so good. It is BROWN in color though (not green), and vanilla with the addition of mint extract seemed to work just as well.
- Sugar free vanilla pudding mix. Man I use this stuff a lot. And sometimes, it’s almost $2 per box! But, It’s my opinion that it gives ice cream a creamier, tastier texture.
- Green food coloring– This is totally not necessary, but I really like mint ice cream to LOOK like mint ice cream! Even though I used real mint leaves, it wasn’t enough to color my ice cream to be this vibrant green you see in the pictures. It was a slight tint of a green, hardly noticeable, without the dye. You don’t need much, so I like to use it.
- Mint extract (Not to be confused with peppermint extract). They are indeed two different things. You can see it in the photo above, or here on Amazon. You should be able to find it in most American Grocery stores.
- Mint leaves- If you have fresh leaves, you should totally use them!
- And finally, Lily’s Sugar free milk chocolate chips! YUM!! These are better than regular milk chocolate chips to me! The have a super creamy mouth feel, and the flavor is FANTASTIC.
Tips on using the Ninja Creami
If you’re new to the Ninja Creami, or you are thinking about buying one, I can’t recommend it enough. (you can find it here on Amazon).
- For all of my protein ice creams with lowfat milk or almond milk, I use the “lite” spin setting. This is for ice creams that don’t have a lot of fat. And, none of mine do.
- I leave my frozen container on the counter for 20-30 minutes! The more frozen your ice cream is when you spin it, the more crumbly it gets, requiring a few re-spins. However, when it’s partially thawed already, you actually can get a super smooth and creamy ice cream, without adding extra liquid or respinning.
- Add ins like Glycerin helps to keep ice cream soft and scoopable, even after you return it to the freezer. (at least that’s what I’ve read. I never have ice cream left over to try it. haha)
Mint Chocolate Chip Protein Ice Cream {Ninja Creami}
Equipment
Ingredients
- 2 cups lowfat milk
- 2 scoops Vanilla Protein Powder (CSE)
- 1 tablespoon sugar free vanilla pudding mix
- 1 drop green food coloring
- 1/8 tsp mint extract
- 5 g mint leaves optional
Mix-in
- 2 tablespoons Lily's sugar free chocolate chips
Instructions
- Blend all ingredients in a high powered blender until smooth. Pour into a quart size ninja creami container
- After frozen, mix on Full and "lite" setting in the Ninja Creami
- Add chocolate chips and spin one more time on the mix-in setting.
