Low Calorie Chicken Fried Rice Recipe

I’m always looking for low calorie meals that are quick and easy to prepare. This low calorie chicken fried rice is one that you can throw together in 30 minutes or less. It’s the perfect weeknight meal for any family. Not only is it time efficient, but it incorporates lots of veggies, making it easy for you to have a balanced meal!

Recently, I found a bag of cauliflower crumbles in the produce department. This is different than the riced cauliflower you find in the freezer section. This one from Green Giant had “fried rice” on the label, and came with some chopped carrots, onion, broccoli and the cauliflower. All chopped up into the perfect size for Fried Rice.
All I did with this bag of fried rice cauliflower crumbles was add some chicken. If you can’t find this specific brand, you could always chop up these same veggies. For me, it was just really convenient to already have them in small pieces, ready for use! For the chicken, I used thighs. However, if you want a lower fat and lower calorie protein option, you can use chicken breasts. I also added a tiny bit of soy sauce for flavor, and that was it!
This chicken fried rice makes for a super easy, low calorie dinner! The total for each serving (assuming you divide it into four servings) is 133 calories, 19 g protein, 5 g carbs, and 3 g fat.
Low Calorie Chicken Fried Rice
Ingredients
- 1 bag cauliflower crumbles fried rice
- 12 ounces chicken thighs
- 1 cup chopped mushrooms
- 1 tbsp soy sauce
Instructions
- Chop an cook 1 4 ounce chicken thigh in a non stick skillet.
- Add cauliflower crumbles and chopped mushrooms.
- Stir over medium high heat until veggies are soft.
- Add soy sauce and stir throughout.
- Divide into 4 and serve.
