40 Calorie Baked Parmesan Tomatoes
Delicious and healthy side dish for dinner, Baked Parmesan Tomatoes! All you need is three things: sliced tomatoes, shredded Parmesan cheese, and fresh basil.

I was never a tomato eater until I dropped my calories this year for the bikini transformation! Now, I’m obsessed!
With 24 calories per tomato, they became a staple in my list of “dietary free foods“. I didn’t have to count them, so I ate a lot of them!
I even tried to grow some tomatoes this summer, but I failed miserably. So, for now, I’m getting my tomatoes at the store, at the farmer’s market, or any roadside stand.
Luckily, they are in season right now, so no matter where I am buying the tomatoes, they are fresh and tasty!
Baking these beauties with some parmesan cheese is now my new favorite way to eat bake parmesan tomatoes.
I first had baked parmesan tomatoes a few weeks before the bikini show. It was my husbands birthday, and of course we had to go out to dinner. We don’t eat out very often. So, when it’s a birthday or an anniversary, we can’t miss going out.
We went to a steak restaurant that he’s loved for a long time. I was super compliant on my diet because I knew I only had a few weeks till stage, and I wasn’t about to mess it up.
So, I scoured the menu. I ordered a steak, and a side for my entree. In the sides section of the menu, I noticed Baked Parmesan Tomatoes. It sounded low calorie, so I ordered it.
WOW!! I couldn’t believe how much I liked it. In fact, I went home and started making my own right away.
How to make Baked Parmesan Tomatoes
To make the baked parmesan tomatoes is easy, and fast!
I used my toaster oven to make it even faster. I LOVE my toaster oven. You can roast veggies in half the time, and you don’t have to heat up the whole house. I got my toaster oven at Costco, but here’s the Amazon link to the same one.
All I did was slice my tomatoes into four slices (to get accurate nutrition info, each slice weighed 60 grams).
Then, I sprinkled the Parmesan on each one. Divided evenly, 1 serving of Parmesan (28 grams) had 4 tablespoons. So, each tomato slice got one tablespoon of Parmesan cheese.
Then, I chopped up some basil I have in my window sill (again, terrible gardener, so the basil is mostly dead or burned by the sun in the window. I really don’t know)
After the basil is sprinkled on, I added some course salt and baked. I baked at 425 in the toaster oven for just 5-6 minutes. You can also make this in a regular oven, for 6-10 minutes. Either way, watch carefully! Once it starts to turn golden brown and bubbly, remove from oven and eat!
The teenagers in my house thought they tasted like little pizzas! WINNING!
Baked Parmesan Tomatoes
Ingredients
- 1 medium tomato (sliced into 4)
- 4 tablespoons Parmesan Cheese Finely shredded
- 1 tablespoon fresh basil chopped
- 1/2 teaspoon course salt
Instructions
- Slice tomato cross-ways into four slices (mine were 60 grams each if you are looking at nutrition info.
- Arrange tomatoes on a cookie sheet.
- Sprinkle 1 tablespoon (7 grams) of shredded Parmesan cheese on each tomato slice. (total 1/3 cup for all 4 tomato slices)
- Chop basil and sprinkle on cheese.
- Sprinkle salt over all 4 slices.
- Bake at 425 for 5-6 minutes in the toaster oven or 5-10 in a regular oven. WATCH CAREFULLY! Once the tomatoes and cheese start bubbling and browning, they are done.
