Skinny Circus Animal Cookies (with Pretzels and Greek Yogurt)

Why are these animal cookies healthy?
Instead of shortbread and sugar, I made these animal cookies with Greek yogurt and pretzels! I have been addicted to eating plain greek yogurt with sugar free pudding mix, and eat it almost daily. Then, I dipped a pretzel in my greek yogurt mix and knew I wanted more!
So, I colored the yogurt pink, dipped the pretzel in, and added sprinkles. Then, I froze them so they could be finger food. I LOVE THESE!!
These circus “cookies” are healthy because

- And second, pretzels over shortbread! Shortbread, while tasty, is just butter and sugar. Pretzels are a heathier alternative because they are lower in calories, without all the sugar.
How to make these healthier circus animal cookies
The steps are simple for this recipe. I embedded a video in the recipe card below, but the basic steps are simply;
- Mix yogurt, pudding mix, almond milk, and food coloring until your yogurt is thin enough to dip pretzels. You’ll want the almond milk to thin it out and make them dippable.
- Dip pretzels. Place on cookie sheet and add sprinkles.
- Freeze for about 30 minutes or longer.
Can you make ahead or store these cookies?
YES! Keep these in the freezer for 7-10 days!
