This delicious, healthy veggie skillet dish has your favorite summer veggies. I included zucchini, summer squash, bell peppers, onions, and mushrooms with some fresh basil and feta cheese for extra flavor.

I’m down to 17 days till I step on the bikini stage for the NPC show in Utah. I’m not going to lie. I’m getting hungry! Any chance I can get for some low calorie options I’m taking.

There’s something about being hungry that just makes food taste better! These summer veggies were no exception. Normally, I like vegetables. I haven’t loved veggies until this bikini prep!

So, hopefully, my new acquired taste for loading my plate with veggies will stick when this is over.

Because summer feels like it’s here (Friday should b 94 degrees!), it’s only fitting that I saute up some summer veggies to fill my belly. It’s also the perfect time to start hiking again! Here’s my husband and I last night hiking in Big Cottonwood Canyon. We’re on the Donut Falls Trail. So pretty!

What are summer veggies?

Classic vegetables for summer in North America include:

  • Squash, like zucchini and summer squash.
  • Cucumbers
  • Bell Peppers
  • Tomatoes
  • Beans
  • Eggplant
  • Pumpkin

And while we’ve planted zucchini, summer squash, bell peppers, and tomatoes, they haven’t grown yet. So, I bought those plus added mushrooms, onions, garlic, and basil to make this summer veggie skillet dish!

The great thing about this recipe, is there is no rules. You can have a variety of veggies in any amount, and it will work out! These just happened to be the veggies I had to cook, and that I was craving.

Ingredients

  • 100 grams mushrooms chopped in large chunks for all veggies
  • 100 grams red bell pepper
  • 100 grams yellow bell pepper
  • 100 grams onion
  • 1 clove garlic
  • 100 grams zucchini
  • 100 grams yellow squash
  • 1 spray butter flavored cooking spray
  • 1/2 ounce feta cheese crumbled
  • 3-5 leaves fresh basil
  • 1 dash salt

Instructions

  • Wash and Chop all veggies into large chunks.
  • Add all veggies at once to a skillet, sprayed with cooking spray
  • Cook veggies on medium heat until soft, about 8-10 minutes.
  • Add feta cheese and salt at the end.
