Right now, watermelon salads are all the rage. I keep seeing delicious looking recipes all over my social media platforms. And I can understand why! Watermelon is a go-to summer food. It’s great on it’s own, but also combined with other ingredients.

Watermelon salads have so much versatility. With watermelon, you can add a hint of sweetness and freshness to any mix of greens or fruit.

So, I decided to round up some AMAZING looking salad recipes, since watermelon is in season!

Recipes for Watermelon Salad

1.Watermelon and Basil Pasta Salad – Something that I think is really cool about this recipe is that fact that it uses protein pasta! Since I have a goal to consume 100g of protein a day, I like finding ways to sneak a little more protein into my meals. Filled with healthy, refreshing ingredients, this watermelon salad recipe is perfect for those who don’t love all the leafy greens.

2. Watermelon Feta Cucumber Salad – While I know this dish isn’t technically Mediterranean food, it kind of reminds me of that category with its cucumbers, feta, and red onion. The simplicity allows each of the ingredients to shine, including the watermelon. Different and delicious!

Plus, it features a lot of traditional salad ingredients such as spinach and onion, making it a familiar entry into the world of watermelon salads!

5. Watermelon Prosciutto Salad with a Balsamic Reduction – While a lot of salads tend to be vegetarian, this one features prosciutto. There is a savory flavor from the prosciutto that blends well with the sweetness of the watermelon and fruitiness of the balsamic. This is great dish for those who want a hearty, chunky salad that feels more like a meal than a side.

7. Chili Lime Watermelon and Jicama Noodles – I use MyFitnessPal to track my calories each day, and there are definitely days where I am craving food but don’t have a ton of calories left in my daily allotment. This recipe would be a great option for days like that, since it allows you to listen to your body and fuel it with a high volume of low calorie food. Definitely a good recipe to have on hand.

8. Watermelon Chicken Salad – Not everyone loves them, but I am a big fan of salads that combine sweet and savory. (If you couldn’t tell from my pumpkin pecan salad, grilled chicken and peach salad, and light chicken salad) And this watermelon salad recipe is no exception! It combines sweet juicy watermelon, tender chicken, peppery arugula, feta, and barley for a burst of flavor.

9. Spicy Watermelon Salad with Charred Corn – This recipe features charred corn, fresh herbs, and crushed corn nuts in a chili lime dressing. Because of its fresh, bold flavors, I think that this spicy watermelon salad would pair great with my stuffed avocados, low carb fajitas, or salsa crockpot chicken. I’ll have to make those soon!
