One reason I can never do a keto diet is bananas! I love bananas. I have one almost every day with my eggs.

One of the biggest complaints I actually get on my meal plans is that I include bananas in my Low-carb menus. I need to emphasize that a low carb meal plan doesn’t mean NO carb! For that, I’d call it a Keto diet. But, instead, I eat high fiber carbs, and I’ve been able to lose weight quite effectively KEEPING bananas in.

Which is why I love this banana pudding recipe!

When making pudding using a sugar free pudding mix, you generally use 2% or whole milk to make it thick and creamy. However, what happens when you try to make pudding (blended with bananas) and skim milk. For the longest time I couldn’t get my sugar free pudding with skim milk to thicken up enough.

That’s when I started reducing the liquid to encourage the thickening.

So, now, my go-to sugar free pudding recipe for bananas includes HALF the amount of milk that classic, full fat, full sugar pudding uses.

Using this simple method of cutting the skim milk in the recipe by half, results in a thick and creamy, delicious pudding, with fewer calories that the classic version.

The classic banana pudding (made with a banana, 2% milk and regular pudding mix is 187 calories per serving. The version with skim milk and sugar free pudding mix is only 48 calories per serving~ A savings of 139 calories!

    1. I have, but it’s been awhile. I can’t speak confidently enough about it to share my ratio. I”m pretty sure though I did the same thing: Cut the liquid by half to help it thicken up.
