Low calorie chicken salad lettuce wraps! Tastes as good as the original, but with a fraction of the calories.

I love taking foods that I enjoy and finding a way to lower the calories. This way, I can enjoy more of the foods I love, while still maintaining a healthy relationship with food.

As I am getting ready for my bikini competition, I’m cracking down on my eating habits. I have to be really intentional with my portion control and calorie counting. AND I’ve been super diligent at the gym.

This combination of mindful eating and rigorous exercise has really made a difference in how I look and feel.

Today, I want to share with you a little swap I made to make my chicken salad lettuce wraps even more low calorie!

Traditional chicken salad recipe, made lighter!  This still tastes as good as the original, with a fraction of the calories. Add a leaf of lettuce instead of eating your chicken salad on bread and save massive calories.

How to make Chicken Salad Lettuce Wraps

Here’s my trick for making low calorie chicken salad lettuce wraps!

The thing is, a lot of people like to use yogurt in place of the mayo to lighten up a chicken salad. Unfortunately, this can change the overall flavor and texture of the chicken salad.

I prefer light mayo to keep the flavor the same! Did you even know that light mayo exists? This is a super simple swap, but it helps to save calories. And to me, the difference between light mayo and the full calorie variety is not that different.

Just like that you have an even healthier version of a classic dish.

One thing that helps me stay on track with my goals is planning ahead what I will eat by meal prepping. This also allows me to portion out my meals beforehand, ensuring that I eat a reasonable amount of food for my body but also that I don’t go overboard.

I like to make the chicken salad ahead of time and store it in the fridge to eat all week. We put it on bread, in tortillas, on rolls, and on lettuce. So, there are lots of options!

Ingredients

  • 2 ounces shredded chicken breasts, cooked
  • 1 tbsp light mayo
  • 35 grams sliced grapes
  • 3 tbsp sliced celery
  • 1 large lettuce leaf

Instructions

  • Mix all ingredients together except lettuce leaf
  • Chill until ready to eat
  • Top lettuce leaf with chicken mixture.
