Pocket Quesadillas {The TikTok Tortilla Hack}

    To make a healthy version of the Quesadilla Pockets (the latest tortilla hack first seen on Tiktok), I used chicken, avocado, spinach, and laughing cow cheese!

    The latest food trend that started on TikTok is to fold a tortilla into four sections and fill each section with your favorite quesadilla toppings.

    I don’t know if there is an official name for this food trend yet. But I like calling it a pocket quesadilla, because the filling fits nice and snug into a pocket like layer. You could also call it a layered quesadilla! But who knows.. maybe it will be known as the TikTok Tortilla hack forever? Haha.

    Whatever you call it, it’s brilliant! Some quesadilla fillings are just tough to add onto a tortilla. Since it’s hard to explain in text, Check out my quick 1 minute video here to show how it’s done ->

    So, here’s mine.. and I promise, I will be making a LOT more of these this year. I’m a HUGE tortilla fan. So much so, that I’ve even made a Youtube video and a post about my favorite low calorie, store bought tortillas. You can see it here.

    All you’ll need to do is visually divide a quesadilla into four sections. Using a knife or pizza wheel, slice from the center, out to the edge of the tortilla. Then starting with the sliced quarter, fold half the quesadilla in half, then fold it again in half, and then one more time in half.

    Once your quesadilla is layered and now a quarter the size of your tortilla, heat a skillet and grill both sides until the outside is nice and crispy.

    For the filling on my tortilla hack trend, I used:

    • Precooked chicken! If you aren’t prepping some cooked chicken once a week, it’s a game changer! See the weekly food prep I do here for proteins.
    • Laughing cow cheese light. For only 30 calories per wedge, I love the laughing cow cheese! I use it ALL THE TIME!
    • Avocado, because avocado on tortillas is HEAVEN.
    • Spinach! A little baby spinach is a healthy way to get in your greens!

    Ingredients

    • 1 medium tortilla
    • 1 wedge light laughing cow cheese
    • 1/2 cup baby spinach
    • 2 ounces shredded chicken
    • 30 grams avocado

    Instructions

    • Precook chicken ahead of time. shred it.
    • Lay out a tortilla, and slice one quarter of the tortilla, just from the center to the edge.
    • Layer the tortilla with chicken, laughing cow cheese, spinach, and avocado, in each of the four sections of the tortilla.
    • Starting with the sliced edge, fold tortilla over the first quarter. Fold again over the second quarter. Fold again over the third quarter. And finally, fold to the last quarter.
    • Spray a skillet with non stick cooking spray. Grill both sides of the tortilla until it's hot and crispy.
