These cookies started as an attempt at some macaroons. I’ve made macaroons with modest success in the past. (see my coconut macaroons here) I really like the idea of using egg whites for the cookies, because they add texture and protein, without many calories.
I also tried to bring the calories even lower with some powdered peanut butter, but that idea for peanut butter cookies using peanut butter powder is still a work in progress.
So, instead, I used the egg whites and cream of tarter. I whipped these until they were foamy. Real egg whites as opposed to egg whites in a carton is ideal for foaming egg whites. The carton egg whites either take forever, or never really create the right consistency.
Then, to give the peanut butter cookies some volume without flour or extra calories, I added rice crispies! These were such a great addition to the peanut butter cookies.
I will definitely be making these again soon!
Low calorie peanut butter cookies
Ingredients
- 2 medium egg whites
- 1/8 teaspoon cream of tarter
- 1/8 teaspoon salt
- 1/3 cup monk sugar
- 1/2 cup peanut butter
- 2 1/2 cup rice crispies
Instructions
- Beat egg whites, cream of tartar and salt till foamy. Add sugar slowly while beating egg whites. Gradually add sugar about Tablespoon at a time, stirring after each addition until dissolved. Beat until mixture has stiff peaks.
- Fold in peanut butter and cereal.
- Bake for 8 to 10 minutes at 325 degrees.
