When you need a sweet cookie, but you’re watching the sugar-you will want this recipe!
There are many ways to make a treat sugar free these days, and I’m loving all the options. Sugar substitutes can be used and some of them taste and behave just like sugar.
So, I chose to use the Classic Lakanto Sugar Substitute to make these cookies, and they turned out great! With a small 2-3 inch cookie cutter, I was able to get 15 fun shapes of sugar cookies.
Then, I also used a sugar substitute for the powdered sugar and made a quick sugar free frosting option for the top.
This recipe makes 15 (two inch cookies. Your will vary based on the size of your cutters. So, get creative and enjoy this treat!

How to make sugar free sugar cookies:
The ingredients I used to make these zero sugar, sugar cookies included:
- Country crock light butter spread- Love this for getting the fat in there, but not too much.
- Lakanto monk sugar (or zero calorie sugar)
- Vanilla extract
- All purpose flour
- Baking powder
Then, for the simple frosting, I included
- Nonfat Plain Greek Yogurt
- zero calorie powdered sweetener
To make the cookies, my process was just like any other sugar cookie I’ve made. I simply:
- Combine butter, sugar, and vanilla extract in a small bowl, and stir till combined.
Add flour and baking powder, and mix (with hands if necessary) to get all ingredients to blend. - Roll dough on a counter (on parchment paper if it sticks) Cut out 2 inch cookies. Bake at 350 for 7-9 minutes

- 6 tablespoons light butter spread
- 2 tablespoons monk sugar (or zero calorie sugar)
- 1 teaspoon vanilla extract
- 1 cup all purpose flour
- 1/2 teaspoon baking powder
Optional Frosting
- 1/3 cup Nonfat Plain Greek Yogurt
- 3-4 tablespoons zero calorie powdered sweetener
Instructions
- Combine butter, sugar, and vanilla extract in a small bowl, and stir till combined.
- Add flour and baking powder, and mix (with hands if necessary) to get all ingredients to blend.
- Roll dough on a counter (on parchment paper if it sticks)
- Cut out 2-3 inch cookies.

As is, the dough was way too dry and wouldn’t come together. I added around a tablespoon of unsweetened soy milk which made it come together, not too sticky, and made it possible to roll out like a traditional dough. Definitely would recommend adding your milk of choice or even water to make the recipe work- it doesn’t need a lot and doesn’t increase the calories too much!
The “dough” is just flour. It doesn’t have enough liquid to bind the ingredients together. Don’t waste your groceries.

I live in Australia and is have been difficult to me to get Country Crock? How can I replace this product? I already attempt
to made some cookies but I think they can be better. I change the country crock for Ghee – grass fed. Is it good? Thanks
You can, and it would probably be amazing! It wouldn’t be as low in calories though- you’d just have to recalculate the calories and macros.

Is the icing supposed to solidify or remain runny?
It should set up enough to not be runny, although it’s still soft. If yours isn’t, I’d use more of the powdered sugar.

I attempted the cookies and icing and they were fairly tasteless. I wonder if I used the wrong type of (spread). Will you tell me what brand you used? Is it a vegetable oil spread because that is what I ended up using-“I cant believe its not butter”. Looks like “Country Crock Light” is also a vegetable oil spread. Suggestions? Thank you!
Good question Martha. It sounds like the butter you used should have been similar enough. Did you use the Monkfruit powdered sugar for the icing, and the monkfruit classic sweetener for the cookies?
