Earth Day Chocolate Protein Pudding Cups
This protein pudding cup is so easy! Using my regular two ingredient pudding mix and yogurt, I added another layer of cottage cheese and chocolate pudding pudding mix, and finally a layer of Kashi chocolate cereal to create a fun Earth Day potted plant.

Last week, for Earth Day, I wanted to celebrate with a fun, healthy snack. But of course, I wanted to stick to my diet! (I’m prepping for another bodybuilding show.). And since Greek yogurt, cottage cheese, and sugar free pudding mix is something that shows up almost daily in my diet, this healthy treat just made sense!

Earth Day Chocolate Protein Pudding Treat
Ingredients
- 1/2 cup Nonfat Plain Greek Yogurt
- 1/4 cup fat free cottage cheese
- 1/4 cup kashi chocolate cereal
- 1 1/2 tablespoon sugar free chocolate pudding mix
Instructions
- Mix 1/2 of chocolate pudding mix with the yogurt, and the other half with the cottage cheese.
- Layer with Kashi cereal, then chocolate pudding, then chocolate cottage cheese, more Kashi cereal, and top it with a strawberry, flower, or if you're clever, cut your fruit into the shape of a flower!

So… I’m not sure where I went wrong here but I entered the recipe into MFP and it’s coming out to 244cals.
My store didn’t have the chocolate Kashi but they had the PB and I checked their website… it’s only a 4-calorie difference for this quantity. I used Dannon Light + Fit Greek because it was lower in calories than all of the other non-fat Greek Yogurt I could find in my store. Cottage Cheese is fat-free and pudding is sugar-free and fat-free. Do you know what brands you used to get it down to 197cals?

Yogurt: 1/2 cup = 60 calories (I used plain nonfat greek yogurt, either Kirkland brand or regular store brand. The kind that shows 100 calories for 2/3 cup.Fat free cottage cheese = 1/4 cup. Great Value brand that is 80 calories for 1/4 cup Kashi 1/4 = 67 caloriesand 1 tablespoon pudding mix = 30 calories
