Why you’ll love Mini Kodiak Blueberry Muffins
I’ve made these kodiak blueberry muffins a few times, since they are so simple and so delicious.
I love adding fresh blueberries to baked goods. Blueberries have loads of antioxidants and phytochemicals that are super beneficial to us.
Blueberries are good for your:
- Bones
- skin
- brain
- Blood pressure
- They are high in vitamin C
- and they taste FANTASTIC!
What you’ll need for Mini Kodiak Cake Muffins
All you’ll need is
- Kodiak pancake mix
- an egg
- blueberries
You’ll need water too, but does that count if I’m promoting it’s only three ingredients? If water counts, it’s 4, but you’ll need water too!
The Kodiak mix is a must have in everyone’s kitchen. It’s so versatile, not only as a mix for waffles and pancakes, but all sorts of delicious baked goods! I’ve made Kodiak cake chocolate cookies, as well as some low calorie, high protein chocolate pancakes here!
If you don’t have a mini muffin pan, you’ll want to get one. It’s a great way to practice portion control. 3 mini muffins are going to be lower in calories than 3 jumbo muffins, of course!
How to make Kodiak Muffins with Blueberries
Making these muffins couldn’t be easier! All you need to do is
- Stir the kodiak mix together with an egg and water.
- Then, slowly fold in the blueberries.
- Then, spoon the batter into mini muffin cups and bake! Because they’re mini muffins, it should only take about 10 minutes to cook.

They don’t last very long in storage, however. If you are going to make these, plan to eat them right away! Once, I tried to save these for a few days because I wanted to get a better photo, and even though they were in a sealed bag, 3 days later my blueberries grew mold! True story.
They aren’t hard to eat right away. In fact, you’re going to want to.
Kodiak Protein Muffins FAQs
The most common question I get about these muffins is if you can make them ahead of time and store them for later. While I prefer to eat muffins as close to baking them as possible, you can store these for up to 24 hours. Because of the whey protein in the muffins, I honestly don’t think they have the same texture after 24 hours. So, just plan on making them on a day where you’ll eat them right away.
Kodiak mix contains 15 g of protein per half cup. While the first few ingredients of wheat flour and oat flour have a little bit of protein, the majority of this comes from whey protein isolate and milk protein concentrate.
Inflammatory foods vary depending on a person’s tolerance to different foods. What might be inflammatory to one person, will have no effect on another.
With that said, if wheat, dairy or gluten tend to be inflammatory for you, I’d recommend skipping the Kodiak mix.
Easy Mini Kodiak Blueberry Muffins
Equipment
- Mini muffin pan
Ingredients
- 1/2 cup kodiak mix
- 1 medium egg
- 1/4 cup water
- 1/4 cup blueberries
Instructions
- Mix all ingredients. Scoop one tablespoon of batter into a greased mini muffin pan.
- Bake at 350 for 10 minutes

Easy Mini Kodiak Blueberry Muffin Recipe-Edit: I did not use Blueberries or the regular Kodiak pancake mix, I used the Kodiak Chocolate chip pancake mix, and I used cherries in place of the blueberries. It was sooo good.
