5 Ingredient Protein Blueberries and Cream Cake
This low fat, low calorie, high protein blueberries and cream cake only has 5 ingredients. It’s made with protein powder, buttermilk, self rising flour, sugar free pudding mix and blueberries.

and today, protein blueberries and cream cake! This recipe for 1 mini loaf has 164 Calories, 21 g Carbohydrates, 16 g Protein, and 2 g Fat.
To make this high protein blueberries and cream cake recipe, you’re going to need some vanilla protein powder. My favorite is the Optimum Nutrition Vanilla Whey, because it’s affordable, and you can find it anywhere! Walmart, Amazon, or Costco all have this brand.
Then, I used buttermilk. Buttermilk is great in baked goods like muffins or sweet breads because it creates a soft texture to baked goods.
If you don’t have buttermilk, I’ve had GREAT success substituting milk with lemon juice mixed in. A general rule of thumb is to use 1 cup of milk with fat (I use 2%), plus 1 tablespoon lemon juice, and let it sit on the counter for about ten minutes. It will start to curdle, and you know it’s ready!
You’ll also need some self-rising flour. I’ve been baking with this a lot recently, just for simplicity sake. I don’t have to worry about whether I forgot the baking powder, or if it should have been baking soda. I just use the self-rising flour and have had great success. Of course, you can make your own self-rising flour if you don’t have any. (here’s a recipe for self rising flour on another blog).
Then, you’ll want some sugar free vanilla pudding mix. The store brand works just as well as the Jello brand. And, it’s usually more than $1 per box, so I almost always buy the store brand if my grocery store has it.
Lastly, the blueberries!! Substitute any berry here, and you’ll love the results!
To make two cakes out of this recipe, I used a Wilton, Mini Loaf Pan (Amazon link here). I love this size! It’s bigger than a standard muffin, but not as big as a regular bread pan.

Protein Blueberries and Cream Cake
Ingredients
- 1/2 cup buttermilk (or 1/2 cup 2% milk with 1/2 tablespoon lemon juice, let stand for 10 minutes)
- 1 scoop vanilla protein powder
- 1/4 cup self rising flour
- 1 tablespoon vanilla sugar free pudding mix
- 1/2 cup blueberries
Instructions
- Prepare a mini loaf pan with cooking spray. Mix wet ingredients into the dry ingredients. Pour into prepared mini loaf pan.
- If no mini loaf pan, make 4 regular size muffins instead.
- Bake at 350 for 18 minutes.
